This takes a good 30 minutes to make so it's a bit longer than most of the recipes on the site but it's a very very easy one to follow and you can be quite flexible with the ingredients.
Ingredients:
- 2 chicken breast
- 1 onion
- 2 garlic cloves
- Half a a head of broccoli
- Sprinkle of mixed herbs
- 150ml boiling water and enough for the rice
- 1 stock cube(can be chicken but I prefer beef)
- 1 big tsp of honey
- Half a lemon juice
- 1 boil in the bag brown rice
- 1 tbsp cornflour optional (makes for a much thicker sauce)
Recipe:
Put on water for the rice to boil. Dice the chicken and pop it in a pot with a lid and some olive oil leaving the lib off, after which start the rice.
Chop the broccoli, onion and garlic while the chicken is cooking. Once the chicken is cooked through throw the broccoli, onion and garlic in and pop the lid on.
wait about 15 minutes. Boil 150ml of water and dissolve the stock cube, honey, lemon juice and cornflour (if you want cornflour). Check that the broccoli is soft and if it is add the stock mix to the pot. Cook for 5 or 10 more minutes with the lid off. The longer you cook it the thicker the sauce is.
Overall the hot pot takes about as long as the brown rice to cook so they go well together and are quite healthy and tasty.
