This is a nice little veg heavy meal that is very juicy and tasty. It can be quite light so it's great for a summer time evening meal. It's based mostly on the Tesco Aubergine bake with a few little differences.
Ingredients:
- 500g Steak Sliced Thinly
- 1 Chopped Onion
- 2 Chopped Garlic Cloves
- 1 Chopped Aubergine
- 1 tin of chopped tomato
- 2 tsp mixed herbs
- 1 tsp or more of spices (eg. Chinese 5 spices)
- 100g bread crumbs
- 100g cheese
Size:
- 4 portions
Recipe:
Fry the steak, onions and garlic until the meat is browned.
Add the aubergine, tomato, herbs and spices to frying pan and cook until the aubergines soften.
This recipe ends up being very juicy but very mild. Go heavy on the herbs and spices if you want it to have any punch.
Spread evenly in a baking dish.
Mix bread crumbs and cheese thoroughly and layer over the aubergine mix.
Bake in the oven at 200C for 25 minutes or so and you're done!
