This is a lovely rich mix for cupcakes from the BBC website. I use dairy milk chocolate rather than cooking chocolate in my recipe to give a really strong chocolate flavour. I haven't covered any of the decoration as they can really be eaten as is or decorated any way you like. I like to go a bit over the top :)
Ingredients:
- 200g of butter
- 200g of Cadbury's chocolate
- 200g light soft brown sugar
- 100ml of boiling water
- 2 eggs
- 1 tsp of vanilla extract
- 250g of self-raising flour
Recipe:
Put the butter, chocolate and sugar in the boiling water over a low heat and melt.
Set aside to cool while you beat the 2 eggs and measure the flour. Preheat the oven to 160C/140C for fan assisted/Gas Mark 3
Add the eggs and vanilla extract to the chocolate mix. Stir Well.
Add chocolate mix to flour and stir until relatively smooth.
Fill 12 to 14 muffin cases 3/4 full. Bake for 20 to 30 minutes until dark brown. Push a tooth pick in the centre of one and make sure it comes away clean to check they are full done. Then you have a set of very tasty cakes for yourself.
